Chicken Salad & Caprese Salad – Two Great Summer Salads

CAPRESE SALAD & CHICKEN SALAD

Caprese Salad Ingredients:

  • Tomatoes
  • Mozzarella Cheese
  • Olive Oil
  • Oregano
  • Black Pepper
  • Balsamic Vinegar
  • Jalapeno Peppers (optional)
  • Garlic Powder (optional)

This dish screams summer.  It is healthy and easy to prepare, and I will admit that I enjoy it year-round.  Thinly slice tomatoes and mozzarella cheese, placing the cheese between each slice of tomato.  Lightly pour olive oil over the sliced tomatoes and cheese.  Sprinkle oregano, garlic powder, and black pepper on the sliced cheese and tomatoes.  (At this point, I finely chop half a jalapeno pepper and sprinkle it over the tomato and cheese to give the dish a little heat).  Lightly pour balsamic vinegar over the sliced tomatoes and cheese.  The result is a delicious salad that is tasty and low in sodium.  Preparation time: 15 minutes.  Enjoy!

Chicken Salad Ingredients:

  • Broiled Skinless & Boneless chicken Breasts
  • Olive Oil
  • Black Pepper
  • 1 Large Sweet Onion (Vidalia onions are the best!)
  • Mayonnaise
  • Ginger
  • 1 or 2 Jalapeno peppers (Depending on the heat intensity that you prefer)

Preparation:

Preheat the broiler, although you can also grill the chicken for the same great taste.  Lighly coat the bottom of a baking dish with olive oil, and place the skinless and boneless chicken in the dish. Lightly pour olive oil over the top of the chicken and sprinkle with black pepper.  Place the dish in the broiler and thoroughly cook both sides until the chicken is done.  Remove chicken from broiler (or grill) and let cool for 10 minutes.

Chop chicken into smaller sizes and put into a food processor.  Finely chop chicken and pour into large bowl. Use the food processor to finely chop the onion and mix with the chicken in the bowl.  Finely chop one to two tablespoons of ginger in the food processor and add to chicken. Add three to four tablespoons of mayonnaise to the mixture, and a tablespoon of black pepper.  Finely chop one or two jalapeno peppers and add to the chicken dish, thoroughly mixing all of the ingredients together.  Place in the refrigerator for two hours to chill.  This makes a light, healthy and delicious low sodium summer meal.  Enjoy!
