THIS TURKEY MEAT SAUCE IS BIG ON TASTE & SHORT ON SODIUM!

TANTALIZING TURKEY MEAT SAUCE

I love a delicious meat sauce that I can serve on top of pasta or rice.  The trick is finding a recipe that is healthy, low on sodium, and tastes good.  After experimenting with different types of meat and ingredients, I now have a recipe that seems to check all three boxes.

Ingredients:

  • 3 Pounds of fresh ground turkey – (I purchase my ground turkey from a local farmer’s market because it’s prepared onsite and does not contain additives – think sodium & potassium – that is common in many commercially pre-packaged foods)
  • 1 Tablespoon of ground cumin (0 mg. of sodium)
  • 1 Tablespoon of Coriander (0 mg. of sodium)
  • 1 Tablespoon of black mustard seeds (optional)
  • 1 Can of tomato paste (20 mg. of sodium)
  • 1 Tablespoon of brown sugar (1 mg. of sodium)
  • 1 to 2 finely chopped jalapeno peppers including the seeds, depending upon the amount of heat desired
  • Vegetable oil (0 mg. of sodium)

Estimated cooking time: 30 minutes

Preparation:

Pour vegetable oil into pan and turn stove to mild heat.  Pour one table spoon of black mustard seeds into pan.  Allow mustard seeds to pop until the popping sound stops.  Add ground turkey to the pan.  Let the ground turkey cook, and use a spatula to turn over meat until its brown on both sides.  Mix in the cumin, coriander, and finely diced jalapeno peppers.  Once the ground turkey has completely browned, mix in the tomato paste, and lastly the brown sugar.  After all of the ingredients have thoroughly absorbed into the turkey, and the meat is cooked.  Turn off the heat and pour onto rice or pasta.  This is an easy and very tasty low sodium meal that is healthy and satisfying!
