I don’t “love” to cook. However, I have come to enjoy cooking more because I now have to follow a low sodium regimen, and I want my food to taste good. That being said, I consider one-pot meals a godsend for busy people. Therefore, this recipe satisfied three important criteria for me: it was fairly easy to prepare, low in sodium, and delicious! Unfortunately, I cannot take credit for this recipe. It was given to me by a very good friend who demands to remain anonymous.
One Pot Round Roast
Ingredients:
*This recipe is best when using a cast iron pot.
- 4 lb. Round roast
- 14 Carrots
- 1 large onion sliced thinly (I recommend either a Vidalia onion, sweet yellow onion, or red onion)
- 1 large package of whole mushrooms
- 1 cup of red wine
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon red or cayenne pepper
- 1/2 teaspoon basil
- 1/2 teaspoon white pepper
Directions:
Layer the bottom of the pot with carrots, mushrooms, and onions. Add red wine. Add round roast cover both sides with white and black pepper. Add remaining ingredients. Pre-heat oven to 275 degrees, cover pot and place in the oven. Cook for two hours and 20 minutes.
When you remove the round roast from the oven, let is rest for 30 minutes with the pot covered. Then eat and enjoy. The cast iron pot helps to create a juicy and flavorful meal. If you have dogs, they will run to the kitchen when they get a whiff of the aroma!
